Ingredients
  

  • 1 cup butter softened
  • 1/2 cup powdered sugar
  • 1 teaspoon mint extract
  • 2 cups all-purpose flour
  • 1 cup mini chocolate chips

Instructions
 

  • Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream together 1 cup of softened butter and 1/2 cup of powdered sugar until light and fluffy, about 2-3 minutes.
  • Add in 1 teaspoon of mint extract, mixing well before gradually incorporating 2 cups of all-purpose flour and 1 cup of mini chocolate chips until well-combined.
  • Form the dough into 1-inch balls and place them on the baking sheet.
  • Bake for 12-15 minutes, or until the edges are lightly golden.
  • Once cooled, roll each cookie in powdered sugar.
