For the Crust:
- 1½ cups Golden Oreo crumbs
- 5 tbsp unsalted butter melted
For the Strawberry Layer:
- 1 3.4 oz box strawberry instant pudding
- 1¼ cups cold milk
For the Cheesecake Layer:
- 8 oz cream cheese softened
- ½ cup granulated sugar
- 1 tsp vanilla extract
- 1 cup whipped topping Cool Whip
For the Strawberry Crunch Topping:
- ½ cup Golden Oreo crumbs
- ½ cup freeze-dried strawberries or 1 small box strawberry gelatin
- 2 tbsp melted butter
Line a muffin tin with cupcake liners.
Mix Golden Oreo crumbs and melted butter. Press 1 tbsp into each liner. Freeze for 10 minutes.
In a bowl, whisk strawberry pudding mix with cold milk. Set aside to thicken.
In another bowl, beat cream cheese, sugar, and vanilla until smooth. Fold in whipped topping.
Spoon a layer of strawberry pudding onto the crust. Top with the cheesecake mixture. Smooth the tops.
Combine topping ingredients: Golden Oreo crumbs, strawberry gelatin (or freeze-dried strawberries), and melted butter. Sprinkle over each bite.
Chill for 3–4 hours or overnight before serving.
You can substitute gelatin with crushed freeze-dried strawberries for a natural topping.
Make sure to chill long enough to set completely.
