Ingredients
  

  • 1 cup onion diced
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 2 cans pinto beans rinsed and drained
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add diced onion and sauté until golden and fragrant, about 5 minutes.
  • Add minced garlic and sauté for an additional minute.
  • Add pinto beans, vegetable broth, cumin, and chili powder. Stir well and bring to a gentle boil.
  • Reduce heat and let it simmer for 20-25 minutes. Mash some beans against the pot's side to thicken.
  • Adjust seasoning to taste and serve hot.

Adjust the spices to match your preferred level of heat. This soup pairs well with crusty bread or tortillas.
