Ingredients
  

  • 1 lb ground beef or ground turkey for a leaner option
  • 2 medium zucchinis sliced
  • 1 cup cherry tomatoes halved
  • 1 red onion sliced
  • 1/2 cup black olives pitted
  • 1/2 cup feta cheese crumbled
  • 2 tablespoons olive oil
  • 2 teaspoons dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground cumin optional
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Prepare the Vegetables: Slice the zucchini and red onion. Halve the cherry tomatoes and set aside the olives and feta cheese for later use.
  • Cook the Ground Beef: In a large skillet or wok, heat olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Sauté the Vegetables: Add the zucchini and onion to the pan with the beef. Stir occasionally, cooking for about 4-5 minutes, until the vegetables are slightly tender but still crisp.
  • Add the Tomatoes and Olives: Stir in the cherry tomatoes and olives. Continue to cook for an additional 2-3 minutes until the tomatoes soften.
  • Season and Combine: Sprinkle in the garlic powder, dried oregano, cumin (if using), salt, and pepper. Stir well and let it cook for another 2 minutes to meld the flavors.
  • Finish and Garnish: Remove from heat and top with crumbled feta cheese and freshly chopped parsley. Serve hot and enjoy!
