Ingredients

For the Chicken Coating:

  • 4 boneless skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • ¼ cup milk
  • 1 cup bread crumbs or gluten-free alternative
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For Searing:

  • 2 tablespoons olive oil

For the Cheese Topping:

  • ½ cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic minced

Instructions

1. Preheat the Oven & Prepare the Baking Dish

  • Preheat oven to 375°F (190°C).
  • Lightly grease a baking dish with olive oil to prevent sticking.

2. Prepare the Coating Mixtures

  • In a shallow dish, add flour for dredging.
  • In another dish, whisk together eggs and milk.
  • In a third dish, mix bread crumbs, Parmesan cheese, Italian seasoning, salt, and pepper.

3. Coat the Chicken

  • Dredge chicken breasts in flour, coating evenly. Shake off excess.
  • Dip the chicken into the egg mixture, coating both sides.
  • Press into the Parmesan-bread crumb mixture, ensuring a full coating.

4. Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken for 3-4 minutes per side, until golden brown.

5. Add the Cheese Topping

  • In a small bowl, mix Parmesan, mozzarella, and garlic.
  • Sprinkle over each chicken breast generously.

6. Bake the Chicken

  • Transfer seared chicken to the prepared baking dish.
  • Bake for 20-25 minutes, or until internal temperature reaches 165°F (74°C).
  • If cheese browns too quickly, loosely cover with foil.

7. Serve & Enjoy!

  • Let chicken rest for 5 minutes before serving.
  • Garnish with fresh parsley and serve with mashed potatoes, veggies, or pasta.

Notes

  • For extra crispiness, double-dip the chicken in the egg and breadcrumb mixture.
  • To make it gluten-free, use gluten-free breadcrumbs.
  • For a healthier version, bake instead of searing or use an air fryer at 375°F for 12-15 minutes.
