Ingredients
  

  • 4 cups cauliflower rice thawed if frozen
  • 1 cup sour cream
  • 1 cup cheddar cheese shredded, divided
  • 4 oz cream cheese softened
  • 1 cup bacon cooked and crumbled
  • 1 tbsp butter
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine sour cream, cream cheese, garlic powder, salt, and pepper.
  • Add cauliflower rice, half of the cheddar cheese, and bacon to the mixture. Stir well.
  • Transfer the mixture to a greased baking dish and top with the remaining cheddar cheese.
  • Bake for 25-30 minutes until cheese is bubbly and golden.

Notes

Great for meal prep and reheats well in the oven.
