- 1 medium onion diced
- 2 carrots diced
- 2 celery stalks diced
- 3 garlic cloves minced
- 8 cups chicken broth
- 2 boneless skinless chicken breasts or thighs
- 1 cup orzo pasta
- Zest and juice of 1 large lemon
- 1 teaspoon dried thyme or fresh herbs
- 2 tablespoons fresh parsley chopped
- Salt and black pepper to taste
Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
