Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 garlic cloves minced
  • 8 cups chicken broth
  • 2 boneless skinless chicken breasts or thighs
  • 1 cup orzo pasta
  • Zest and juice of 1 large lemon
  • 1 teaspoon dried thyme or fresh herbs
  • 2 tablespoons fresh parsley chopped
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; sauté until softened.
  • Stir in garlic and cook for 1 minute until fragrant.
  • Pour in chicken broth and add chicken. Bring to a boil, then reduce to a simmer for 20 minutes.
  • Remove chicken, shred with two forks, and return to the pot.
  • Stir in orzo pasta and cook until al dente, about 8–10 minutes.
  • Add lemon zest, lemon juice, thyme, salt, and pepper. Stir well.
  • Finish with chopped parsley and adjust seasonings before serving.

Notes

For creamier soup, whisk in 1 beaten egg with hot broth before serving.
Swap orzo with rice or small pasta if preferred.
Rotisserie chicken works well as a shortcut.
