Ingredients
  

For the Soup:

  • 1 lb ground beef or Italian sausage
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 15 oz can tomato sauce
  • 1 14 oz can diced tomatoes
  • 4 cups chicken broth or beef broth
  • 2 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes optional
  • Salt and black pepper to taste
  • 8 lasagna noodles broken into pieces

For the Cheese Topping:

  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish

Instructions
 

Cook the Meat:

  • Heat a large pot over medium heat. Add the ground beef or Italian sausage and cook until browned. Break it apart with a spoon and drain excess fat.

Sauté Aromatics:

  • Stir in the diced onion and cook for 3-4 minutes or until softened. Add minced garlic and cook for 1 minute until fragrant.

Build the Base:

  • Pour in the tomato sauce, diced tomatoes, chicken broth, Italian seasoning, crushed red pepper flakes (if using), salt, and pepper. Stir well and bring to a simmer.

Cook the Noodles:

  • Add the broken lasagna noodles to the pot and cook for 10-12 minutes or until tender, stirring occasionally to prevent sticking.

Prepare the Cheese Mixture:

  • In a small bowl, mix ricotta cheese with grated Parmesan. Set aside.

Assemble and Serve:

  • Ladle the soup into bowls, top each with a dollop of the ricotta-Parmesan mixture, and sprinkle with shredded mozzarella. Garnish with fresh basil.

Notes

  • For a spicier kick, use hot Italian sausage or add extra crushed red pepper flakes.
  • If you want a creamier soup, stir in ½ cup of heavy cream before serving.
  • To avoid soggy noodles when storing leftovers, cook them separately and add them when reheating.
