- 1 lb ground beef or Italian sausage
- 1 tablespoon olive oil
- 1 medium onion diced
- 3 garlic cloves minced
- 1 can 28 oz crushed tomatoes
- 1 can 15 oz tomato sauce
- 6 cups chicken or beef broth
- 2 teaspoons Italian seasoning
- 1 teaspoon dried basil
- 1 teaspoon salt to taste
- ½ teaspoon black pepper
- 8 lasagna noodles broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Fresh basil leaves for garnish
Heat olive oil in a large pot. Brown ground beef or sausage until fully cooked. Drain excess fat.
Add onion and garlic. Sauté for 2–3 minutes until fragrant.
Stir in crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, salt, and pepper. Simmer 10 minutes.
Add broken lasagna noodles. Cook until noodles are tender, about 10–12 minutes. Stir occasionally.
Ladle soup into bowls. Top each with ricotta, mozzarella, and Parmesan. Garnish with fresh basil.
