Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 3 garlic cloves minced
  • 1 can 28 oz crushed tomatoes
  • 1 can 15 oz tomato sauce
  • 6 cups chicken or beef broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper
  • 8 lasagna noodles broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions
 

  • Heat olive oil in a large pot. Brown ground beef or sausage until fully cooked. Drain excess fat.
  • Add onion and garlic. Sauté for 2–3 minutes until fragrant.
  • Stir in crushed tomatoes, tomato sauce, broth, Italian seasoning, basil, salt, and pepper. Simmer 10 minutes.
  • Add broken lasagna noodles. Cook until noodles are tender, about 10–12 minutes. Stir occasionally.
  • Ladle soup into bowls. Top each with ricotta, mozzarella, and Parmesan. Garnish with fresh basil.
  • Serve hot and enjoy your cozy bowl of lasagna soup!

Notes

For extra depth, add a splash of red wine while simmering the sauce.
To prevent mushy noodles, cook them slightly underdone; they will soften more in the hot soup.
Store without noodles if planning to freeze. Add freshly cooked pasta when reheating.
