Ingredients
  

  • 1 cup onion diced
  • 2 cloves garlic minced
  • 1 lb sausage sliced
  • 4 cups kale chopped
  • 6 cups vegetable broth
  • 1/2 teaspoon red pepper flakes optional
  • to taste salt
  • to taste black pepper

Instructions
 

  • In a large pot, sauté chopped onions and minced garlic over medium heat until fragrant and translucent, about 5 minutes.
  • Add sliced sausage, cooking until browned. This should take around 7 minutes; the aroma will be inviting!
  • Stir in chopped kale and vegetable broth. Bring to a simmer; cook for 15 minutes until the kale is tender yet vibrant in color.
  • Season with salt, pepper, and red pepper flakes to taste. Serve warm, garnishing with a sprinkle of parmesan if you like.
