  • 4 pork chops boneless, medium size
  • 1/2 teaspoon sea salt to season
  • 1/8 teaspoon ground black pepper to season
  • 1 teaspoon garlic powder
  • 1 tablespoon avocado oil
  • 1 teaspoon butter unsalted
  • 4 garlic cloves peeled and minced
  • 1 small white onion peeled and sliced
  • 1/4 cup pineapple juice
  • 3 tablespoons cornstarch
  • 1 1/2 cups pineapple cut into cubes
  • 2 tablespoons honey
  • fresh cilantro for garnish
  • green onions for garnish
  • cooked rice to serve

Instructions
 

  • Season the pork chops generously with sea salt, black pepper, and garlic powder. Heat avocado oil in a large skillet over medium-high heat until it's shimmering.
  • Add the sliced onion and minced garlic to the skillet, sautéing for about 2 minutes until they become fragrant and slightly soft.
  • Gently place the seasoned pork chops into the skillet, cooking one side for 4-5 minutes until golden brown. Flip the chops to sear the other side.
  • In a bowl, whisk together the pineapple juice and cornstarch until smooth. Pour this mixture into the skillet along with the butter, stirring continuously as the sauce starts to bubble.
  • Add the pineapple cubes to the sauce and coat the pork chops evenly, letting them simmer in the glaze for 3-5 minutes until the internal temperature reaches 145°F.
  • Reduce the heat to medium and stir in the honey, mixing it into the pineapple sauce. Allow the dish to rest off the heat for 5 minutes before serving.
  • Serve the juicy pork chops drizzled with the pineapple sauce alongside rice or quinoa, garnished with fresh cilantro and slice of green onions.
