Ingredients
  

Broth

  • 4 cups water
  • 1 piece kombu 4–5 inch
  • 0.5 cup bonito flakes

Seasoning

  • 1 tablespoon light soy sauce
  • 1 tablespoon mirin
  • 0.5 teaspoon salt

Instructions
 

Broth

  • Combine water and kombu in a saucepan. Let it steep for 30 minutes.

  • Warm over medium heat until small bubbles form around edges, about 5 minutes. Remove kombu just before boiling.

  • Add bonito flakes and bring to a gentle simmer for 30 seconds. Turn off heat and steep 2–3 minutes.

Seasoning

  • Strain the dashi through a fine sieve and return to the pot. Stir in soy sauce, mirin, and salt on low heat.

Notes

Cool the broth completely before refrigerating to preserve clarity.
Reheat gently over low heat to avoid bitterness.
