Ingredients
  

  • 4 hard boiled eggs peeled and chopped
  • 2 cucumbers peeled and diced
  • 2 green bell peppers diced
  • 0.5 red onion finely diced
  • 0.5 cup sliced pepperoncini peppers
  • 0.25 cup roasted sunflower kernels
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.75 cup avocado oil
  • 0.25 cup red wine vinegar
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon red pepper flakes

Instructions
 

  • In a small bowl, whisk together the avocado oil, red wine vinegar, maple syrup, lemon juice, garlic powder, Italian seasoning, smoked paprika, salt, black pepper, and red pepper flakes until well combined and aromatic.
  • In a large mixing bowl, combine the chopped hard-boiled eggs, diced cucumbers, green bell peppers, finely diced red onion, sliced pepperoncini, and roasted sunflower kernels. The mix of colors is mesmerizing!
  • Drizzle half of the dressing over the salad and gently toss to coat. Adjust the dressing to your taste, adding more if desired.
  • Serve right away or keep in an airtight container in the fridge for up to 5 days. Enjoy the freshness!

Notes

This salad is not only delicious but also very versatile. I recommend adding a bit of smoked paprika for a unique twist. To keep the salad fresh, store the dressing separately until you are ready to enjoy it.
