Ingredients
  

  • 1 teaspoon dehydrated onion powder
  • 1 teaspoon black pepper
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon cloves
  • 0.25 teaspoon cayenne pepper
  • 1 tablespoon olive oil for sautéing
  • 4 cloves garlic chopped small
  • 2 shallots shallots chopped small
  • 1 teaspoon freshly grated ginger
  • 2 tablespoons anchovy paste or chopped anchovies
  • 1 cup apple cider vinegar
  • 0.5 cup molasses
  • 0.25 cup fish sauce
  • 2 tablespoons tamarind paste
  • 1 lime lime juiced

Instructions
 

  • In a dry skillet, add the dehydrated onion powder, black pepper, cinnamon, cloves, and cayenne pepper. Toast them over medium-high heat for 1-2 minutes until they release a fragrant aroma, but be careful not to burn them.
  • In a medium pot over medium heat, drizzle a layer of olive oil and introduce the chopped shallots. Sauté until they turn transparent and tender, about 3 minutes. Then add the chopped garlic, ginger, and the reserved spices, cooking over medium-low heat for about 30 minutes until everything is fragrant and warming.
  • Combine the anchovy paste, apple cider vinegar, molasses, fish sauce, and tamarind paste in a bowl. Pour this mixture into the pot, stirring well to scrape up any bits from the bottom, and bring it to a simmer before turning off the heat and letting it cool completely.
  • Pass the mixture through a fine mesh strainer into a measuring pitcher. Stir in the lime juice, mix to combine, and then transfer into a clean bottle or jar for storage.
  • Store your Homemade Worcestershire Sauce in the refrigerator for up to two months; it will deepen in flavor over time.
