Ingredients
  

  • 1 cup unsalted butter softened
  • 1.5 cup granulated sugar
  • 4 large eggs room temperature
  • 2.5 cup all-purpose flour sifted
  • 1 cup fresh strawberries diced and drained
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 350°F (175°C) and grease a loaf pan.
  • In a mixing bowl, cream the softened butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Gently fold in the sifted flour and strawberries until combined.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake for 60 minutes or until a toothpick inserted in the center comes out clean.
