- 2 pounds fresh ripe figs stems removed and quartered
- 1½ cups granulated sugar
- ¼ cup fresh lemon juice
- ½ cup water
Wash and prepare the figs by removing stems and cutting them into quarters.
Add figs, sugar, lemon juice, and water to a heavy-bottomed saucepan.
Bring to a boil over medium heat, then reduce to a simmer.
Stir often, mashing the figs as they soften to your desired texture.
Simmer uncovered for 45–60 minutes, stirring occasionally, until thickened.
Test for doneness by placing a small spoonful on a chilled plate. If it wrinkles when pushed, it’s ready.
Spoon the jam into sterilized jars, seal, and let cool.
Store in the fridge for up to 3 weeks or process in a water bath for longer storage.
For a deeper flavor, add 1 tsp vanilla or a cinnamon stick while cooking (remove before jarring).
You can substitute honey for part of the sugar for a more natural sweetener.
Use an immersion blender for a smoother texture.
