Ingredients

  • 2 teaspoons vegetable oil for sautéing
  • 3/4 pound ground pork or ground chicken
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 3 cups coleslaw mix adds crunch
  • 1/4 cup sliced green onions
  • 1 tablespoon soy sauce for seasoning
  • 1 teaspoon toasted sesame oil enhances flavor
  • 12 pieces egg roll wrappers ensure freshness
  • 1 egg beaten egg for sealing
  • oil for frying enough to submerge rolls

Instructions

  • In a large skillet over medium-high heat, warm the vegetable oil until it sizzles. Add the ground pork, seasoning it lightly with salt and pepper.
  • Cook the pork, breaking it apart with a spatula, until it's browned and well-cooked, lasting about 5-7 minutes. Stir in the minced garlic and ginger, cooking for an additional 30 seconds to release their fragrances.
  • Mix in the coleslaw and green onions, cooking until the cabbage wilts and softens, roughly 3-4 minutes.
  • Incorporate the soy sauce and sesame oil, stirring well, then take the skillet off the heat.
  • Spoon 2-3 tablespoons of filling onto each egg roll wrapper, folding and sealing with the beaten egg as per package instructions.
  • Pour enough oil into a deep pot to reach a height of 2-3 inches and heat it to 350°F.
  • Carefully fry 3-4 egg rolls at a time, turning them occasionally until they're golden brown, approximately 3-5 minutes.
  • Let them drain on paper towels, then enjoy with your favorite dipping sauce.
