- 4 cups broccoli florets chopped
- 1 cup carrots shredded
- 1 small onion diced
- 2 cloves garlic minced
- 2 cups low-sodium chicken or vegetable broth
- 1 ½ cups skim milk or unsweetened almond milk
- 1 cup low-fat cottage cheese blended until smooth
- 1 ½ cups sharp cheddar cheese shredded
- 1 tbsp olive oil or butter
- 2 tbsp all-purpose flour or cornstarch for gluten-free
- Salt and black pepper to taste
- Pinch of nutmeg optional, for depth of flavor
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant, about 2 minutes.
Stir in broccoli and carrots. Cook for 3–4 minutes until slightly tender.
Sprinkle in flour, stirring to coat vegetables. Slowly whisk in broth and bring to a simmer. Cook until broccoli is soft, about 10 minutes.
Reduce heat to low. Stir in milk and blended cottage cheese. Simmer gently, do not boil.
Add shredded cheddar cheese and stir until melted and creamy.
Season with salt, pepper, and nutmeg (if using). Adjust thickness by adding more broth if needed.
Serve hot with crusty bread or crackers.
For extra protein, stir in shredded rotisserie chicken or white beans.
If you prefer a smoother soup, blend half (or all) of the mixture before adding the cheese.
