Ingredients
  

  • 5 eggs large, at room temperature
  • 1 cup self raising flour
  • 1/4 cup oil
  • 100 g cheese grated
  • 300 g zucchini grated, strain any excess liquid off
  • 200 g carrots grated, approx 2 small
  • 1 large onion finely chopped
  • 100 g thinly shaved ham finely chopped
  • salt and pepper to season

Instructions
 

  • Preheat your oven to 180°C (350°F) and grease a baking dish.
  • In a large bowl, whisk together 5 large eggs until they are fluffy.
  • Add 150g self-raising flour, 60ml oil, and salt and pepper to taste. Mix until just combined.
  • Fold in grated zucchini, carrots, onion, and ham. Ensure everything is well blended.
  • Pour the mixture into the prepared baking dish and top with grated cheese. Bake for about 40 minutes.
