Ingredients
  

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter cold and grated
  • 3/4 cup milk
  • 1 cup ham diced
  • 1-2 jalapenos finely chopped (seeds removed for less heat)
  • Optional: 1 tablespoon milk for brushing the top

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients: In a large bowl, whisk together flour, baking powder, and salt.
  • Incorporate the butter: Add the grated butter to the dry ingredients. Use a pastry cutter or your hands to combine until the mixture resembles coarse crumbs.
  • Add the milk: Pour in the milk and stir gently until a dough forms. Do not overmix.
  • Add ham and jalapenos: Gently fold in the diced ham and chopped jalapenos until evenly distributed throughout the dough.
  • Shape the biscuits: Turn the dough onto a lightly floured surface and pat it down to about 1-inch thickness. Use a biscuit cutter or a glass to cut out biscuits.
  • Bake: Place the biscuits on the prepared baking sheet. Brush the tops with milk for a golden finish (optional). Bake for 12-15 minutes, or until the biscuits are golden brown and fully cooked.
  • Cool and serve: Remove the biscuits from the oven and let them cool slightly before serving.

Notes

  • Spice level: Adjust the amount of jalapenos to suit your desired spice level. For a milder biscuit, remove all seeds and use one jalapeno.
  • Storage: Store leftover biscuits in an airtight container at room temperature for up to 2 days. To freeze, wrap each biscuit individually and place in a ziplock bag or airtight container. They can be frozen for up to 3 months.
  • Reheating: Reheat biscuits in a 350°F (175°C) oven for 5-7 minutes for the best texture.
