Ingredients
  

  • 2 lbs boneless skinless chicken breasts or thighs, cubed
  • 2 tbsp olive oil
  • 1 packet 1 oz ranch seasoning mix
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp chopped parsley or 1 tsp dried
  • 1 tsp smoked paprika optional
  • Salt and pepper to taste
  • Wooden or metal skewers if wooden, soak in water 30 mins

Instructions
 

  • Make Marinade: In a large bowl, mix olive oil, ranch seasoning, garlic, Parmesan, parsley, paprika, salt, and pepper.
  • Marinate Chicken: Add chicken chunks to the bowl and coat well. Cover and refrigerate for at least 1 hour (or overnight for stronger flavor).
  • Prep Skewers: Thread marinated chicken onto skewers.
  • Grill: Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning occasionally, until chicken is fully cooked and lightly charred.
  • Garnish & Serve: Sprinkle extra Parmesan and parsley before serving. Enjoy hot.

Notes

For added spice, mix in a pinch of cayenne or crushed red pepper.
To make dairy-free, substitute nutritional yeast for Parmesan.
Leftovers store well in the fridge for 3 days.
Can also be baked at 425°F for 20–25 minutes if you don’t have a grill.
