Ingredients
  

  • 6 –8 chicken thighs bone-in or boneless, skin-on or skinless
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 3 garlic cloves minced
  • 1 tbsp dried Italian herbs oregano, thyme, basil
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley optional, for garnish

Instructions
 

  • In a bowl, whisk olive oil, lemon juice, garlic, herbs, paprika, salt, and pepper.
  • Add chicken thighs and toss to coat. Cover and marinate in fridge for 30 minutes (up to 8 hours).
  • Preheat grill to medium-high heat and lightly oil the grates.
  • Grill chicken thighs 5–7 minutes per side, or until charred and internal temp is 165°F (74°C).
  • Remove and let rest 5 minutes before serving. Garnish with fresh parsley if desired.

Notes

For extra flavor, marinate overnight.
Can substitute boneless thighs for quicker cooking.
Leftovers are great in salads, wraps, or sandwiches.
