Ingredients
  

  • 1.5 pounds thin-sliced boneless skinless chicken breasts
  • 0.5 cup ketchup
  • 0.25 cup reduced sodium soy sauce
  • 0.25 cup light brown sugar packed
  • 3 tablespoons avocado oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground ginger
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 fresh pineapple cleaned, cored, and sliced
  • thinly sliced green onions optional

Instructions
 

  • In a large zip-top bag, mix ketchup, soy sauce, brown sugar, avocado oil, lemon juice, ginger, salt, and pepper until well blended.
  • Add the chicken to the bag, seal it, and give it a good shake to coat everything. Let it marinate in the fridge for at least 30 minutes, or overnight for even more flavor.
  • Preheat the grill to medium-high heat and lightly oil the grates to prevent sticking. Remove the chicken from the marinade and get it onto the grill, along with those pineapple spears.
  • Grill the chicken for about 5 minutes on one side, then flip it, cooking for another 4 to 5 minutes until it's fully cooked. Rotate the pineapple occasionally until caramelized.
  • Top with sliced green onions if desired and enjoy this tropical delight right away!
