Ingredients
  

  • - 12 oz bowtie farfalle pasta, cooked and cooled
  • - 1½ cups cherry tomatoes halved
  • - 1 cucumber diced
  • - ½ cup kalamata olives halved
  • - ½ red onion finely diced
  • - ½ cup green bell pepper diced (optional)
  • - ¾ cup crumbled feta cheese
  • - 2 tbsp fresh parsley chopped

**For the Feta Dressing:**

  • - ½ cup crumbled feta cheese
  • - ⅓ cup plain Greek yogurt
  • - ¼ cup olive oil
  • - 2 tbsp red wine vinegar
  • - 1 garlic clove minced
  • - 1 tsp dried oregano
  • - Salt and pepper to taste
  • - 1–2 tbsp water or milk to thin (if needed)

Instructions
 

  • Cook bowtie pasta according to package directions. Drain and rinse under cold water. Set aside to cool.
  • In a blender or food processor, add feta, Greek yogurt, olive oil, vinegar, garlic, oregano, salt, and pepper. Blend until smooth. Thin with water or milk if needed.
  • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, olives, red onion, and bell pepper.
  • Pour the feta dressing over the salad and toss until well coated.
  • Top with additional crumbled feta and chopped parsley.
  • Chill for 30 minutes before serving for best flavor.

- Use high-quality feta in brine for best taste.
- Add grilled chicken or chickpeas for a protein boost.
- Pasta should be rinsed in cold water to prevent sticking.
