- 2 cups mashed potatoes cooled and thick
- 1 lb ground beef
- 1 small onion finely chopped
- 2 garlic cloves minced
- 1 cup shredded mozzarella or cheddar cheese
- Salt and pepper to taste
- 1 tsp paprika or smoked paprika optional
- 1/4 cup breadcrumbs for coating
- 2 tbsp oil for baking or pan-frying
- Fresh parsley for garnish
In a skillet, cook ground beef with onion and garlic until browned. Season with salt, pepper, and paprika. Let cool.
Stir shredded cheese into the beef mixture until slightly melted.
Take a scoop of mashed potatoes, flatten into a disc, and fill with a spoonful of beef-cheese mixture. Seal and form into a ball or patty.
Coat lightly with breadcrumbs. Repeat for all.
Place on a greased baking sheet or skillet.
Bake at 400°F (200°C) for 20–25 minutes or pan-fry until golden and crisp.
Garnish with fresh parsley and serve warm.
Chill the mashed potatoes and shaped bombs for easier handling.
