This Garlic Parmesan Chicken Meatloaf is juicy, cheesy, and loaded with bold garlic and herb flavors. Made with ground chicken, mozzarella, and Parmesan, it’s a lighter twist on classic meatloaf that’s perfect for family dinners.
Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper or grease it lightly.
In a large bowl, mix ground chicken, eggs, breadcrumbs, Parmesan, mozzarella, garlic, seasoning, milk, and parsley.
Shape into a loaf and place on the prepared baking sheet.
Brush with olive oil or butter. Sprinkle additional mozzarella and Parmesan on top.
Bake for 45–50 minutes or until internal temp reaches 165°F (74°C).
Broil for 2–3 minutes for a golden top, if desired.
Let rest for 10 minutes, then slice and serve. Garnish with chopped parsley.
