Ingredients
  

  • 1 ½ lbs boneless chicken breast cut into bite-sized chunks
  • 1 ½ lbs Yukon gold potatoes cubed
  • 3 tbsp olive oil divided
  • 2 tbsp unsalted butter
  • 4 cloves garlic minced
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped, for garnish

Instructions
 

  • Heat 2 tbsp olive oil and butter in a large skillet over medium-high heat.
  • Season chicken with salt, pepper, paprika, and half of the Italian seasoning.
  • Add chicken to the skillet and cook until golden brown and cooked through (6–7 minutes). Remove and set aside.
  • In the same skillet, add remaining olive oil and potatoes. Cook until golden and fork-tender (10–12 minutes).
  • Stir in minced garlic and cook for 1 minute until fragrant.
  • Return chicken to the skillet, sprinkle Parmesan over the top, and stir to coat.
  • Reduce heat, cover, and let the cheese melt for 2–3 minutes.
  • Garnish with fresh parsley and serve hot.

Notes

Use Yukon gold or red potatoes for best results.
For extra cheesiness, add shredded mozzarella along with Parmesan.
Avoid overcrowding the pan so the potatoes get crispy edges.
Adjust garlic and Parmesan to taste for a richer flavor.
