Ingredients
  

  • 1 lb ground beef cooked
  • 1 cup onion diced
  • 1 cup bell pepper diced
  • 4 cups cabbage chopped
  • 2 tbsp taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup Fritos for topping

Instructions
 

  • In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes, breaking it apart as it cooks.
  • Add the diced onion, diced bell pepper, and chopped cabbage to the skillet, stirring until the cabbage wilts, about 5 minutes.
  • Stir in the taco seasoning and the can of diced tomatoes with green chilies. Cook for an additional 5 minutes, until heated through and combined.
  • Serve the mixture topped with a generous handful of Fritos for crunch.

Notes

Feel free to add black beans or corn for extra flavor and texture.
