Ingredients
  

  • 2 large boneless, skinless chicken breasts sliced horizontally into 4 cutlets
  • 1 tablespoon avocado oil for searing chicken
  • 3 large yellow onions thinly sliced, about 1½ pounds
  • 1/2 cup dry white wine optional for deglazing
  • 1 cup beef broth
  • 1 cup chicken broth
  • 1.5 cups Gruyère cheese freshly shredded, for topping

Instructions
 

  • In a large oven-safe skillet over medium heat, melt the butter and avocado oil together. Add the sliced onions with a pinch of salt and stir until well mixed.
  • Cover the skillet for the first 5 minutes to help soften the onions. After that, remove the lid and cook for another 25 to 30 minutes, stirring occasionally until the onions turn a deep golden brown and sweet aroma fills the kitchen.
  • While the onions are cooking, pat the chicken dry and generously season both sides with salt and pepper. Dust each cutlet with flour, shaking off any excess to help achieve a nice golden crust.
  • Increase the heat to medium-high and add the chicken to the skillet. Cook for about 3 to 4 minutes per side until they are beautifully browned. The chicken doesn't need to be fully cooked as it will finish in the gravy.
  • Pour in the white wine to deglaze the skillet, using a wooden spoon to scrape up any tasty brown bits. Let the wine reduce for 2 to 3 minutes, intensifying the flavors.
  • Return the caramelized onions to the skillet and sprinkle in the remaining flour, stirring for about a minute to combine. Gradually pour in the beef and chicken broth, stirring until the mixture is smooth.
  • Add the Worcestershire sauce and simmer the gravy for about 5 minutes, letting it thicken until it lightly coats the back of a spoon.
  • Return the chicken to the skillet and spoon the luscious onion gravy over each piece. Let it simmer gently for about 5 minutes, ensuring the chicken reaches an internal temperature of 165°F.
  • Finish by sprinkling the Gruyère cheese on top and broiling in the oven for 2 to 4 minutes until the cheese melts, bubbles, and turns slightly golden.
  • Allow the pan to rest for about 5 minutes before serving. Garnish with a sprinkle of fresh thyme and enjoy the dish while the cheese is gooey and delicious.
