Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup butter melted
  • 1.5 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  • In a mixing bowl, combine cottage cheese, eggs, and melted butter until smooth.
  • In another bowl, whisk together flour, baking powder, and salt; combine with the wet ingredients until just mixed.
  • Pour the batter into the prepared muffin tin, filling each cup about three-quarters full, and bake for 20-25 minutes or until golden brown.
