Ingredients
  

  • 8 large eggs
  • ½ cup milk or heavy cream
  • 1 cup shredded cheese cheddar, mozzarella, or your choice
  • 1 cup fresh spinach chopped
  • ½ cup red bell pepper diced
  • 2 green onions sliced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a muffin tin or use silicone molds.
  • In a bowl, whisk eggs with milk or cream until smooth.
  • Stir in cheese, chopped spinach, bell pepper, green onion, salt, and pepper.
  • Divide mixture evenly into muffin cups, filling each about ¾ full.
  • Bake for 18–22 minutes, or until eggs are set and lightly golden.
  • Let cool slightly, then remove from molds. Serve warm or store for later.

Notes

For extra fluffiness, blend eggs and milk in a blender before baking.
Swap in your favorite mix-ins like bacon, mushrooms, or jalapeños.
