Easy Teriyaki Chicken Stir Fry

I love whipping up this Teriyaki Chicken Stir Fry on busy weeknights. It’s quick, flavorful, and packed with colorful vegetables that brighten up my dinner plate. The sticky sauce gives everything a sweet finish, making it a meal the entire family enjoys.

Ingredients
  

  • 2 pieces boneless skinless chicken breasts cut into 1-inch pieces
  • 1/2 teaspoon garlic powder
  • to taste black pepper
  • 3 tablespoons cornstarch for coating
  • 3 tablespoons avocado oil divided
  • 1/2 pieces medium onion sliced
  • 2 cups broccoli florets cut small for even cooking
  • 1/2 pieces red bell pepper sliced
  • 1/2 cup chicken broth
  • 3 tablespoons mirin sweet rice wine
  • 2 tablespoons soy sauce
  • 1 teaspoon rice vinegar or apple cider vinegar
  • 1/4 cup brown sugar packed
  • 1 tablespoon cornstarch for sauce thickening
  • 1 teaspoon grated fresh ginger
  • 2 cloves minced garlic

Instructions
 

  • Start by prepping all your ingredients; chop the broccoli and bell peppers into bite-sized pieces. The brighter colors will excite your kitchen!
  • In a medium bowl, whisk together the sauce ingredients until well combined, with the sweet aroma of mirin mixing beautifully with soy sauce.
  • Cut the chicken into 1-inch pieces, season with garlic powder and black pepper, and coat thoroughly with cornstarch for a crispy finish.
  • Heat 2 tablespoons of avocado oil in a deep skillet over medium-high heat until shimmering, then add half the chicken, cooking until golden brown.
  • Flip pieces after about 4 minutes and continue cooking for another 3 to 4 minutes until fully cooked. Remove and set aside; repeat with remaining chicken.
  • If the skillet is looking dry, add a touch of oil and toss in the onions, stirring for 1 minute until fragrant.
  • Throw in the broccoli and bell peppers; cook for around 3 minutes, stirring often until the veggies are tender-crisp.
  • Return the chicken to the pan, pour in the sauce, and mix well. Let everything bubble for less than a minute until thickened and coated, then remove from heat.

This Teriyaki Chicken Stir Fry is one of my favorite quick meals. It's easy to vary the veggies based on the season, making it versatile and delicious.
