Ingredients
  

  • 2 cups water
  • 1 cup rice uncooked
  • 16 ounce turkey kielbasa cut diagonally into 1/4 inch slices
  • 1 cup onion chopped
  • 1 cup green bell pepper chopped
  • 1 clove garlic chopped
  • 30 ounce canned kidney beans drained
  • 16 ounce can whole peeled tomatoes chopped
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon pepper
  • salt to taste

Instructions
 

  • Gather the ingredients.
  • Prepare the rice: Bring water to a boil in a saucepan. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes.
  • Meanwhile, cook sausage in a large skillet over low heat for 5 minutes.
  • Stir in onion, green pepper, and garlic; saute until tender.
  • Add in beans and tomatoes with juice. Season with oregano, pepper, and salt.
  • Simmer uncovered for 20 minutes. Serve over rice.
