Ingredients
  

  • 4 cup mixed greens washed and dried
  • 1 cup cherry tomatoes halved
  • 1 cup cucumbers diced
  • 1 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoon balsamic vinegar
  • to taste salt
  • to taste pepper

Instructions
 

  • Wash and dry the mixed greens thoroughly.
  • Halve the cherry tomatoes and dice the cucumbers.
  • In a large bowl, combine the mixed greens, tomatoes, and cucumbers.
  • Top with crumbled feta and drizzle olive oil and balsamic vinegar.
  • Season with salt and pepper to taste, then toss gently to combine.

Notes

Best served fresh; can be made ahead but keep dressing separate.
