Ingredients
  

  • 2 cucumbers thinly sliced
  • 1 red chili pepper thinly sliced
  • 2 tablespoons fresh parsley or cilantro chopped
  • 2 tablespoons vinegar or lemon juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions
 

  • Thinly slice cucumbers and place them in a large bowl.
  • Add sliced chili and chopped herbs.
  • Drizzle with vinegar (or lemon juice) and olive oil.
  • Season with salt and pepper.
  • Toss gently to coat all ingredients.
  • Chill in the fridge for 10–15 minutes before serving.

Notes

For best results, salt the cucumbers and let them sit for 10 minutes before mixing to remove excess water. This keeps the salad crisp and fresh. You can also swap parsley with dill for a more classic flavor.
