Ingredients
  

  • 1 cup corn frozen or canned
  • 2 medium jalapenos diced
  • 1 8 oz cream cheese softened
  • 1 cup cheddar cheese shredded

Instructions
 

  • In a skillet, sauté diced jalapenos until they soften, about 3 minutes.
  • In your crockpot, combine sautéed jalapenos, corn, cream cheese, and shredded cheddar cheese. Stir until well mixed.
  • Set your crockpot to low and cook for 2 hours, stirring occasionally until everything is melted and bubbly.
  • Before serving, give it a final stir and garnish with fresh cilantro.

Notes

For a smokier flavor, add smoked paprika during cooking.
