Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup sun-dried tomatoes chopped
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil optional, for searing
  • Fresh basil or parsley for garnish

Instructions
 

  • Season chicken breasts with salt, pepper, and Italian seasoning.
  • (Optional) Heat olive oil in a skillet and sear chicken 2–3 minutes per side.
  • Place chicken in the Crock Pot.
  • Add garlic and sun-dried tomatoes over the chicken.
  • Pour in heavy cream and sprinkle Parmesan cheese on top.
  • Cover and cook on LOW 4–5 hours or HIGH 2–3 hours until chicken is tender.
  • Stir sauce gently before serving. Garnish with fresh basil or parsley.
  • Serve hot over pasta, rice, or mashed potatoes.

Notes

For a thicker sauce, stir in 1 teaspoon cornstarch mixed with 2 tablespoons water during the last 30 minutes of cooking.
Boneless chicken thighs can be used instead of breasts for a juicier result.
Store leftovers in the fridge for up to 3 days.
