Ingredients
  

  • 2 large eggs
  • 2 tbsp granulated sugar
  • 1 cup milk whole or non-dairy
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 inches vegetable oil for frying

Instructions
 

  • Mix the Batter: In a large mixing bowl, whisk eggs and sugar until frothy. Add milk and vanilla extract, mixing well. Sift in flour, baking powder, and salt, and fold gently until smooth.
  • Heat the Oil: In a deep frying pot or skillet, heat oil to 375°F (190°C). Use a candy thermometer for accuracy.
  • Pipe and Fry: Transfer batter to a squeeze bottle or piping bag. Pipe 3–4 inch lines of batter into the hot oil. Fry for 1–2 minutes per side until golden brown, then drain on paper towels.
  • Add Toppings: Dust with powdered sugar or any topping of your choice. Serve immediately with dips.
