Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups cooked shredded chicken rotisserie works great
  • 2 cans 15 oz each white beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 2 cans 4 oz each diced green chiles
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • Salt and black pepper to taste
  • 4 oz cream cheese softened (or 1 cup heavy cream)
  • Optional toppings: shredded cheese cilantro, lime wedges, tortilla chips

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add onion and garlic, sauté until fragrant and soft.
  • Stir in shredded chicken, cumin, oregano, chili powder, salt, and pepper.
  • Add beans, corn, and green chiles. Mix well.
  • Pour in chicken broth and bring to a simmer. Cook for 20 minutes, stirring occasionally.
  • Reduce heat and stir in cream cheese until melted and smooth.
  • Taste and adjust seasoning.
  • Serve hot with toppings like cheese, cilantro, lime juice, and tortilla chips.

Notes

For extra thickness, mash some beans before adding cream cheese.
For spice lovers, add jalapeños or cayenne pepper.
Can be made in a slow cooker: cook on low 6 hours, stir in cream at the end.
