Ingredients
  

  • 1 cup mayonnaise a creamy base
  • 1 teaspoon dijon mustard adds tanginess
  • 2 tablespoons parmesan cheese for a nutty flavor
  • 2 cloves garlic, minced aromatic and flavorful
  • 2 teaspoons Italian seasoning for authentic flavor
  • 3 tablespoons red wine vinegar for acidity
  • 1 tablespoon avocado oil a healthier oil option
  • Kosher salt to taste
  • black pepper to taste
  • 12 oz tricolor rotini pasta colorful and fun
  • 8 oz salami, chopped adds protein
  • 1 red bell pepper, diced for sweetness
  • 0.5 cup black olives, sliced adds brininess
  • 0.5 cup red onion, diced for a crisp bite
  • 1 cup mozzarella cheese, diced for creaminess
  • 2 tablespoons fresh parsley, chopped for freshness

Instructions
 

  • Fill a large pot with salted water and bring it to a boil. Add the rotini pasta and cook according to the package directions until al dente. Drain the pasta and let it cool slightly.
  • In a mixing bowl, combine the mayonnaise, dijon mustard, grated parmesan cheese, minced garlic, Italian seasoning, red wine vinegar, and avocado oil. Whisk until smooth, adjusting with more oil if needed for consistency.
  • Once the pasta has cooled, add it to the dressing along with the chopped salami, diced bell pepper, sliced olives, diced red onion, mozzarella, and chopped parsley. Gently toss to combine.
  • Taste and season with a little salt and pepper. Serve immediately, or cover and refrigerate for 4-5 days to allow flavors to meld.

Notes

This salad is incredibly versatile and perfect for prepping ahead of time. It tastes even better the next day!
