Ingredients
  

  • 1 lb boneless skinless chicken breast or thighs diced
  • 1 tbsp olive oil
  • 1 small onion chopped
  • 4 cloves garlic minced
  • 1 cup white rice uncooked
  • cups chicken broth
  • ½ cup heavy cream
  • 1 cup frozen peas and carrots
  • cups shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden. Remove and set aside.
  • In the same skillet, sauté onions for 2–3 minutes, then add minced garlic and cook until fragrant.
  • Stir in the uncooked rice, then pour in chicken broth. Bring to a boil.
  • Reduce heat, cover, and simmer for 15–18 minutes until rice is tender and broth is mostly absorbed.
  • Stir in heavy cream, mixed veggies, and the cooked chicken. Simmer for 3–4 minutes.
  • Sprinkle cheddar cheese on top. Cover until melted or broil for 2–3 minutes until bubbly.
  • Garnish with chopped parsley and serve hot.

Notes

Swap white rice for brown rice (increase broth and cook time).
For added flavor, stir in a pinch of paprika or Italian seasoning.
Mozzarella or Monterey Jack cheese can be used in place of cheddar.
