- 1 lb boneless skinless chicken breast or thighs diced
- 1 tbsp olive oil
- 1 small onion chopped
- 4 cloves garlic minced
- 1 cup white rice uncooked
- 2½ cups chicken broth
- ½ cup heavy cream
- 1 cup frozen peas and carrots
- 1½ cups shredded cheddar cheese
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
In a large skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until golden. Remove and set aside.
In the same skillet, sauté onions for 2–3 minutes, then add minced garlic and cook until fragrant.
Stir in the uncooked rice, then pour in chicken broth. Bring to a boil.
Reduce heat, cover, and simmer for 15–18 minutes until rice is tender and broth is mostly absorbed.
Stir in heavy cream, mixed veggies, and the cooked chicken. Simmer for 3–4 minutes.
Sprinkle cheddar cheese on top. Cover until melted or broil for 2–3 minutes until bubbly.
Garnish with chopped parsley and serve hot.
Swap white rice for brown rice (increase broth and cook time).
For added flavor, stir in a pinch of paprika or Italian seasoning.
Mozzarella or Monterey Jack cheese can be used in place of cheddar.
