  • 2 cups cooked rice preferably day-old
  • 10.5 oz cream of mushroom soup
  • 0.5 cup milk whole milk recommended
  • 0.5 cup sour cream
  • 2 cups shredded cheddar cheese divided
  • 0.5 cup diced onion finely chopped
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 cup breadcrumbs optional topping
  • 2 tbsp chopped parsley optional garnish
  • 0.25 tsp red pepper flakes optional for heat

Instructions
 

  • Begin by preheating your oven to 375°F and lightly greasing an 8x8-inch baking dish to prevent sticking.
  • Next, steam the broccoli florets for 2 to 3 minutes until they are vibrant and slightly tender, enhancing their bright green color.
  • In a large mixing bowl, combine the cream of mushroom soup, milk, sour cream, diced onion, garlic powder, salt, and black pepper. Stir until the mixture is smooth and well blended.
  • Gently fold in the cooked rice, steamed broccoli, and 1 1/2 cups of cheddar cheese, ensuring every piece is coated.
  • Transfer the mixture to the prepared baking dish, spreading it evenly before sprinkling on the remaining cheddar cheese and breadcrumbs if you've chosen to use them.
  • Bake the casserole for about 25 to 30 minutes, until it bubbles and the top turns a beautiful golden brown.
  • Before serving, garnish with fresh parsley and a sprinkle of red pepper flakes if desired for an extra kick.

Notes
