Ingredients
  

  • 1 1/2 pounds ground beef
  • 3/4 cup onion chopped
  • 2/3 cup dried seasoned breadcrumbs
  • 1/2 cup BBQ sauce
  • 1 egg beaten
  • 2 teaspoons chili powder
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 2 pounds potatoes peeled and cut into chunks
  • 1 can evaporated milk 12-Ounce
  • 1/2 cup butter softened
  • 1 teaspoon garlic powder
  • 1/2 cup French-fried onions
  • 1 cup Mexican blend cheese shredded
  • 6 slices bacon cooked and crumbled

Instructions
 

  • Preheat your oven to 350°F, setting the stage for a cozy dinner.
  • In a large mixing bowl, combine the ground beef, chopped onion, breadcrumbs, BBQ sauce, beaten egg, chili powder, half the salt, and black pepper. Mix gently until just incorporated.
  • Transfer the meat mixture into a 9 x 13-inch baking dish, pressing it evenly. Bake for 30 minutes, allowing enticing aromas to fill your kitchen.
  • Meanwhile, place the potato chunks in a pot, cover with water, and boil for about 20 minutes until they are tender. Drain them, then mash with evaporated milk, butter, garlic powder, and the remaining salt and pepper for a creamy texture.
  • After removing the meatloaf from the oven, evenly spread the mashed potatoes over the top. Top it off with crispy fried onions, shredded cheese, and crumbled bacon.
  • Return the casserole to the oven and bake until the cheese is melty and bubbling, roughly another 10 minutes. Serve hot and enjoy!
