Ingredients

  • 2 lbs steak ribeye, sirloin, or flank
  • 1 tablespoon avocado oil for cooking
  • 0.5 cup unsalted butter melted
  • 2 cloves garlic minced
  • 1 tablespoon fresh parsley chopped
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon red pepper flakes or to taste
  • 1 teaspoon lemon juice freshly squeezed
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt to taste
  • 0.25 teaspoon black pepper to taste
  • 1 - slider buns or mini brioche rolls

Instructions

  • Start by preparing the cowboy butter. In a bowl, mix the melted butter with minced garlic, parsley, Dijon mustard, red pepper flakes, lemon juice, paprika, salt, and pepper. This blend should create a rich aroma.
  • Next, pat the steak dry with paper towels and generously season both sides with salt and black pepper.
  • In a hot skillet, heat the avocado oil over medium-high heat. Sear the steak for 3 to 4 minutes on each side for a medium-rare result. Allow the steak to rest for 5 to 10 minutes before slicing it thinly against the grain.
  • While the steak is resting, place the slider buns cut side down in the same skillet to toast them until they are golden brown.
  • Finally, assemble the sliders by layering the sliced steak on the bottom buns. Generously spoon the cowboy butter over the steak, add any optional toppings, and crown with the top bun.

Notes

Ribeye, sirloin, or flank steak work wonderfully for these sliders. Letting the steak rest after cooking is crucial for maximum juiciness.
