Ingredients
  

  • 12 oz bowtie pasta
  • 2 tablespoons avocado oil
  • 2 large boneless chicken breasts cubed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 cups broccoli florets
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Bring a large pot of salted water to a boil. Add bowtie pasta and cook as per package instructions. Add broccoli florets in the last 2-3 minutes. Drain and set aside.
  • Heat avocado oil in a large skillet over medium-high heat. Season chicken with salt, black pepper, smoked paprika, and red pepper flakes. Cook for 5-7 minutes until golden brown.
  • Reduce heat to medium. Melt butter in the same skillet, add garlic and cook for 30 seconds until fragrant. Stir in lemon zest, juice, Dijon mustard, dried basil, and thyme.
  • Add drained pasta and broccoli to the skillet, tossing to coat in the sauce. Sprinkle with Parmesan and fresh parsley, tossing again before serving warm.
