Ingredients
  

  • 2 medium courgettes zucchini, shaved into ribbons
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 1 small red chili finely chopped (optional)
  • 1 tbsp fresh dill or parsley chopped

Instructions
 

  • Use a vegetable peeler to slice the courgettes into long, thin ribbons.
  • In a small bowl, whisk olive oil, lemon juice, salt, and pepper.
  • Place the courgette ribbons in a serving bowl or plate.
  • Drizzle the dressing over the ribbons and gently toss.
  • Sprinkle with feta, chopped chili (if using), and fresh herbs.
  • Serve immediately for the best texture and flavor.

Notes

For a vegan option, skip the feta or use a plant-based cheese.
Add toasted pine nuts or sunflower seeds for crunch.
Use yellow and green courgettes for a more colorful presentation.
