Ingredients
  

For the Pork Chops:

  • 4 boneless pork chops about 1 inch thick
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 2 large eggs
  • 1 cup buttermilk or regular milk
  • Vegetable oil for frying

For the Bacon Gravy:

  • 6 slices of bacon chopped
  • 2 tablespoons all-purpose flour
  • 1 ½ cups milk or dairy-free milk like almond or oat milk
  • Salt and pepper to taste

Instructions
 

  • Prepare the Pork Chops: Season the pork chops with salt, pepper, garlic powder, and paprika. Set aside for a few minutes to allow the flavors to meld.
  • Coat the Pork Chops: In a shallow bowl, mix the flour, salt, pepper, garlic powder, and paprika. In another bowl, whisk together the eggs and buttermilk. Dip each pork chop first in the flour mixture, then in the buttermilk mixture, and coat again in the flour mixture for extra crispiness.
  • Fry the Pork Chops: Heat about 1 inch of vegetable oil in a large skillet over medium-high heat. Once the oil is hot (test with a pinch of flour—if it sizzles, it’s ready), fry the pork chops for 4-5 minutes on each side, until golden brown and cooked through. Remove from the skillet and set aside on paper towels to drain excess oil.
  • Make the Bacon Gravy: In the same skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon drippings in the pan. Add the flour to the bacon drippings and whisk for 1-2 minutes to form a roux.
  • Create the Gravy: Slowly pour in the milk, whisking constantly to avoid lumps. Bring the mixture to a simmer and cook for 3-5 minutes, until the gravy thickens. Season with salt and pepper to taste.
  • Serve: Place the crispy pork chops on plates and generously spoon the bacon gravy over the top. Sprinkle the crispy bacon bits on top for added texture and flavor.

Notes

For a gluten-free version: Use a gluten-free flour blend for the breading and gravy.
Make it spicier: Add a pinch of cayenne pepper or hot sauce to the gravy or breading to give it a spicy kick.
