  • 1.5 cups cottage cheese low-fat
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion finely chopped
  • 2 tablespoons parsley chopped
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice freshly squeezed
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper freshly ground

Instructions
 

  • In a large bowl, combine cottage cheese, cucumber, cherry tomatoes, and red onion.
  • Add chopped parsley, olive oil, and lemon juice.
  • Season with salt and black pepper to taste. Mix gently until well combined.
  • Serve immediately or chill in the fridge for 30 minutes for flavors to meld.
