Ingredients
  

  • 1 cup cottage cheese full fat or low fat
  • 1/2 cup shredded cheddar or pepper jack cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika optional
  • 1 tablespoon jalapeño brine or fresh lime juice
  • 1 –2 tablespoons milk or water if needed to thin
  • Salt to taste
  • Optional toppings: sliced jalapeños chopped cilantro, green onions

Instructions
 

  • Add cottage cheese, shredded cheese, garlic powder, onion powder, paprika, and jalapeño brine to a blender or food processor.
  • Blend until smooth and creamy.
  • Pour the mixture into a saucepan and warm over medium-low heat, stirring until fully melted and heated through.
  • If the dip is too thick, stir in milk or water 1 tablespoon at a time until desired consistency is reached.
  • Season with salt to taste.
  • Serve topped with your favorite garnishes and enjoy warm with chips or veggies.

Notes

Full-fat cottage cheese yields a creamier dip.
For extra heat, blend in a slice of fresh jalapeño or a few dashes of hot sauce.
Make it vegan by using dairy-free cottage cheese and cheese alternatives.
