In a mixing bowl, combine 1 cup of cottage cheese, 2 large eggs, and 1 teaspoon of vanilla extract. Mix until smooth.
Add 1/2 cup of all-purpose flour and 1/2 teaspoon of baking powder into the mixture. Stir gently until just combined.
Preheat a non-stick skillet over medium heat. Pour 1/4 cup of the batter onto the skillet. Cook until bubbles form and the edges look set, about 3-4 minutes.
Flip the pancakes and cook for an additional 2-3 minutes, until golden brown. Serve warm.
